Grasshopper Pie

I know, once in awhile, you just have to cut loose...saw this recipe from Kraft in a magazine while waiting in the grocery line, and just couldn't resist it.  I had one little sliver...okay, maybe two. But I tried to make it as healthy as it could possibly be. Does organic milk count?

Grasshopper Pie
serves 8

1 Oreo pie crust (6 oz.)
1  pkg. JELL-O Pistachio flavor sugar-free instant pudding
2 cups softened Cool-Whip (reduced fat or sugar free)
1 and 1/2 cups cold lowfat milk
6 mint chocolate sandwich cookies, chopped
1/4 cup semi-sweet mini morsels

Pour the milk into a deep bowl. Add the pudding and beat with a wire whisk until thickened. Gently stir in 1 and 1/2 cups of Cool Whip, then fold in the chopped cookies. Spoon into the chocolate crust.  Spread the remaining Cool Whip over the top of the pie, then sprinkle with the mini morsels.

Chill or freeze 2 hours. Keep refrigerated. And put a lock on it.  :)
