Black Bean Brownies

I just couldn't believe it until I tried it myself. Black beans and brownies. What? You're raising your eyebrows? That's okay, I had the same reaction. My hair stylist shared her love for this dessert with me, and I'll admit, I made a funny face.

But as a true "foodie", I can't judge until I actually make and taste what I'm being judgemental about. So, here they are, and the taste is wonderful. Moist, chocolately, and satisfying, without the eggs and oil you would usually use. Try it and let me know what you think!

Black Bean Brownies
makes 12 squares

1 box of your favorite brownie mix
1 can of black beans

Preheat oven to 350 degrees, and lightly grease a 13x9 pan with cooking spray.

Dump the brownie mix into a large bowl. Open the can of beans, and pour beans, as well as the juices, right into a blender. Blend until beans are pureed. (I actually used my "Magic Bullet" gadget). Pour bean mixture into the brownie mix, stir well, and pour evenly into the prepared pan. (If mix seems too dry, add a little water to make it into a smooth batter-)










Bake for 25-30 minutes. Cool, slice and enjoy!

Okay, this sounds crazier than the soda cake! I will def. give this a try. I love brownies sooo much. :)

Wow! I guess I will have to take your word for it and try it myself. What could be better than a brownie with fiber in it? :D
