Fruit Salad It Is!

As you know, I'm trying to be good. Really, I am. It's so hard. I caved today and enjoyed a chunk of chocolate praline cake with pecans and whipped cream frosting. It was baked by my friend, and was by far, one of the best cakes I have tasted! Although I enjoyed every bite, I felt pretty guilty when I got home from work. So I made a fruit salad for tonight. It's something you can enjoy practically guilt free, with the exception of one little ingredient I like to add. Okay, a splash of rum. How bad can a little "splash" be? Oh, and a sprinkling of coconut. (This is getting worse, isn't it?)
I really have a hard time avoiding the "snack hour" around 9:00pm. I unfortunately seem to get a second wind at this time, and even though I'm not hungry, I search the cupboards for something sweet, salty, or both. Due to my guilty enjoyment of that chocolate cake, I forced myself to do a two mile speed walk on the treadmill before dinner, then did about 15 minutes of light weights, so in my silly mind, a splash of rum and a little coconut is well deserved! (Please don't follow my example, I have absolutely no willpower.)

No Worries Fruit Salad
1 cantaloupe (shaped into 1" balls)
1 honeydew melon (cubed)
1/2 seedless watermelon (shaped into 1" balls)
1 pound of strawberries (sliced)
1/2 pound fresh pineapple (cut into small chunks)
2 bananas (sliced)
3 tablespoons pineapple juice
*just a splash of white rum
**just a sprinkling of coconut



I'm hoping everyone has a melon baller somewhere in their utensil drawer (I wish I could refer to it as something else, but I guess it is what it is...)

It does a really great job at making all different kinds of food look neat and pretty:
Mix the fruit and pineapple juice together, and then if you want, add the rum and coconut.
You can really add any fruit your heart desires, but I kind of stuck with what looked good in the produce department for now. Once summer hits, I will definitely go for assorted berries and fresh grapes at the farmer's market to add with the melon, but this worked fine tonight in helping me to avoid the ice cream in the freezer. (Although I did enjoy that guiltless bit of rum....)
