Grilled Pizza Appetizers

This is such a fast, easy recipe, one that's great for a backyard party.  Make a pitcher of something fun and bubbly, throw a salad together, put on some great music, and fire up the grill...

Grilled Pizza Appetizers

serves 6-8

1 package soft tortillas (8-inch)
2 cups grated mozzarella
1/4 cup grated provolone
1/4 cup fresh mozzarella balls (tiny)
3-4 basil leaves, torn
2 cups finely diced tomatoes (bruschetta style)
1 tablespoon olive oil
1 clove garlic, halved

Preheat grill to 400 degrees.  Place 4 tortillas on a large cutting board or cookie sheet. Gently rub both sides of each tortilla with the cut side of the garlic. You want the oils from the garlic clove to flavor the shells.
 Fresh ingredients are very important in this recipe. I like to dice up some ripe tomatoes into tiny cubes, and flavor them with Italian seasonings and garlic. If you can't find good tomatoes, you can use canned petite diced tomatoes. Just be sure to drain them really well. You can also use fresh made bruschetta from the grocery store deli bar.
 I always have basil in my freezer. It stays nice and green, but wilts fast once it starts to thaw. The flavor is still great, and goes well with these little mozzarella balls!
 Of course, grated provolone and mozzerella is a must...
 Now let's get cookin'!  After rubbing with cut garlic, lightly brush both sides of each tortilla with olive oil.
 Place on your grill until the bottom of the shells start to show grill marks.
 Turn off one side of your grill, flip each tortilla over and move to the side with indirect heat.
 Now spread on your toppings. First the tomatoes, basil and mozzarella balls....
Then the grated cheese! Close the top and grill until the cheese has melted. With a spatula, place grilled pizzas back on your board or cookie sheet.

Now, bring out the salad,
 Cut your pizzas into wedges and serve!
